Mughlai Paratha

Mughlai Paratha, Also know as Murtabak is a griddle fried bread, stuffed with veg or non veg fillings.
Usually, dough for this recipe is made with all purpose flour. I tried making it with whole wheat flour and it turned out so good you definitely have to try it yourself!

Ingredients:

*For the dough*


  • 3 cups whole wheat flour 
  • 1 cup warm water (for kneading, you might require more or less according to your flour)
  • 1/2 tsp salt
  • 1 tbsp Vegetable oil(or ghee)


*Fillings*

  • 1/2 cup minced chicken
  • 2 medium size onion, finely chopped
  • 1 cup shredded carrots
  • 1 cup shredded Potatos
  • 1 1/2 cup shredded cabbage
  • 1 or 2 green chili, thin slices
  • 2 tsp red chili powder
  • 1/2 tsp Turmeric
  • 2 tsp curry powder 
  • 1/2 tbsp ginger garlic paste
  • 1 small stick Cinnamon
  • 2 cloves
  • 2 pods cardamom
  • 2 tbsp oil

*Other ingredient*


  • 1- 2 tbsp whole wheat flour ( for dusting surface )
  • 3-4 tbsp Vegetable oil(for frying paratha)


Instructions:


*Step 1: prepare dough*


  • In a mixing bowl combine flour, salt and oil. Then gradually add water and knead.(add 1/2 cup water first, mix then add other half little by little. This way you can avoid making Sticky dough).
  • Knead until the dough is smooth and fluffy to touch. Keep it aside...


*Step 2: Make filling*


  • Heat oil in a pan and add the whole spices(cinnamon, cloves and cardamom), let them Splutter.
  • Add chicken and cook till color changes to white.
  • Add ginger garlic paste, sauté for a minute, add onions and sauté.
  • Once onion turns translucent, add Veggies (carrot, cabbage, Potatos), spices (turmeric, chili and curry powder) and mix.
  • Cook for 5-6 minutes or until Vegetables are cooked.
  • Let the filling cool to room temperature before use. This is very important because if you use hot filling, it will release steam and make dough soggy!


*Step 3: prepare & Make Paratha*



  • Grease a griddle with oil and heat it.
  • Remove all the whole Spices(cinnamon stick, cardamom and cloves) from filling to avoid biting it while eating (why spoil the fun.. just remove it and let us all enjoy our mughlai Paratha!😊)
  • Divide dough into small, equal balls. Flatten dough using a rolling pin. You don't have to make them in to perfect round shapes. Somewhere between round and square will do too...
  • Spoon in required amount of filling and fold them as shown in video below.
  • Place folded side down in hot griddle, add few drops of oil, flip frequently to avoid burning the sided. Cook until paratha is equally cooked on all sides.
  • If your griddle is big enough, cook in batches of 2-3 at a time.
  • Repeat the same for remaining dough.
  • Serve hot with onion and yogurt raita.!
