Mee Hoon / bee Hoon are thin white rice noodles. They are made in so many ways.
In today's recipe I have made it very simple with very little ingredients but you can add so much more flavors as your taste buds request!
Ingredients:
- 200g Mee Hoon
- 1 litter water (or for completely soaking Mee Hoon+ 1 tsp)
- 2 cups cabbage (thin Julianne)
- 1 cup carrots (thin Julianne)
- 1 cup Beans(cut diagonally)
- 1 cup baby corn (cut diagonally)
- 3-5 cloves garlic (minced)
- 2 eggs
- 4 tbsp oil
- 1 tsp soy sauce
- 1 tsp vinegar
- 2 tsp salt (or to taste)
- 1 tbsp sesame seeds (optional for garnish)
*You can add chicken, shrimps, sprouts... anything you fancy just make sure it matches with other ingredients!
* You can use sesame oil for added flavor
*For sambal/sauce*
- 2 large tomatoes (roughly chopped)
- 2 large onion (roughly chopped)
- 5 cloves garlic
- 3-5 dry red Chilies
- 1-2 tbsp water
Instructions:
- Soak noodles in water for 30 minutes.
- In a mixer jar add all ingredients listed in sambal and grind to coarse paste.
- Head 1 tbsp oil in a pan.
- Beat 2eggs with a tsp of water and fry them. Remove to a plate.
- In a wok or pan hear 3 tbsp oil, add minced garlic, sambal, salt and sauté for 1-2minutes or until raw smell goes.
- Add veggies and cook for few more minutes (3-5 minutes) , add soy sauce, vinegar.
- Add strained noodles now, and combine all ingredients well.
- Spread noodles gently to avoid breaking them.
- Breakdowns eggs to small pieces and add them to noodles. Mix well.
- In this stage you can add 1 tbsp water and cook little bit longer if you finder noodles raw or dry.
- Serve hot garnished with sesame seeds.
