This recipe is famous around my native, it's called Ammuku Muttai.
It's highly made as a side dish for biryani but I like to have it with sambar rice, curd rice, rolled in dosa or chapati!
Ingredients:
- 5-6 Eggs
- Water (for boiling eggs)
- 1 tbsp Mustard Oil
- 1 tsp ginger garlic paste
- 2 tsp Kashmiri Chilli powder
- 1/2 tsp Turmeric powder
- Hand full curry leaves (more for garnish)
- 1 tsp salt (+ a pinch)
Instructions:
- Wash eggs carefully, place them on a sauce pan, Add water, pinch of salt and boil for 10 minutes.
- After eggs are cooked, cool them down by placing them in running tap water.
- Remove shell and slightly slit 3 sides of each egg.
- In a pan heat oil, add ginger garlic paste and sauté.
- Then add curry leaves and let them Splutter.
- The add chili, Turmeric powder, salt and sauté.
- Add eggs and stir slightly without breaking them.
- Cook until masalas stick to eggs and slightly crispy.
- Garnish with more curry leaves and serve hot.
