Semiya Kesari

Kesari is something that comes to our minds instantly when we have surprise guests... It's so easy to make and with very little ingredients yet so delicious you'll definitely crave for more!


This recipe make 1 medium sized bowl of semiya Kesari. Serves 2 if you don't mind sharing :)

INGREDIENTS:


  • 1/2 Cup Toasted Vermicelli (dry roast Vermicelli if yours is not roasted or toasted)
  • 1 Cup Water
  • 1/3 Cup Sugar
  • 5 Cashew Nuts (halved)
  • 5 Raisins
  • 3 Almonds (small pieces)
  • 1 Tbsp Ghee
  • 1/2 tsp crushed Cardamom (for flavoring)
  • 1/3 tsp Kesari color (or orange food color)
  • Pinch of salt


INSTRUCTIONS:


  • Heat ghee in a pan, add nuts and give it a toss, add raisins and toast till nuts are golden and raisins are puffed. 
  • Add water, salt and food color. Wait till water bubbles and add Vermicelli. Stir frequently.
  • Once water is reduced add sugar, Cardamom and stir gently until sticky and semi dry.
  • Semiya Kesari turns thicker when it cools so don't cook it too dry.
  • Transfer to a bowl and serve hot or cold.
  • You can also flatten it on a plate, let it cool to room temperature and cut into diamonds or squares.
