Making biryani is not so time consuming as you think! You can make a delicious and aromatic biryani in no time!!
Ingredients:
- 2 cups Basmati Rice
- 2 onion, Finely sliced
- 2 Tomatoes, Finely sliced
- 1 green chili, slit
- 1/2 cup Mushrooms
- 1/2 cup potatoes
- 1/2 cup carrots
- 1/2 cup beans (dice to bite size cubes, you can also include other veggies like beetroot, cauliflower..)
- 1 tsp Red chili powder
- 1/2 tsp Turmeric powder
- 1/2 tsp cumin powder
- 1 tsp black pepper powder
- 1 tbsp biryani masala (used store-bought veg biryani masala)
- 1/2 tbsp lemon juice
- 1/2 tbsp Ginger & garlic paste
- 1 tbsp plain yogurt
- 1 small stick Cinnamon
- 2 Cardamom Pods
- 1 Star Anise
- 2 tsp salt
- 2 tbsp oil
- 1 tbsp Ghee
- 3 1/2 cups Water
- Few coriander leaves
- Few mint leaves
Instructions:
- Rinse rice 3 times and soak it in water for 15-30 minutes.
- Place pressure cooker in stove, Add oil, ghee and heat.
- Add cinnamon stick, Cardamom, anise, green chili and let them Splutter.
- Add onion, salt, sauté and add tomatoes.
- After onion turns translucent and tomatoes are mushy add ginger & garlic paste and sauté for a minute.
- Add yogurt, spices except biryani masala, add veggies and sauté for half a minute.
- Add water to the pressure cooker and bring it to boiling stage.
- When water is coming to boil add rice, coriander leaves, mint leaves, lemon juice, biryani masala and give it a mix.
- Cover with lid and place nozzle. Cook for 3 Whistles. After 3 whistles switch of stove and let pressure release completely before opening lid.
- Open lid and mix gently without breaking rice. Serve hot with onion Rita.
