Tomato Pachadi is one of the easiest to make. It's made in South Indian houses to compliment with porridge or with spicy biryani. But it's most famously used in some part of Tamil Nadu with ghee rice along with mashed banana and sugar syrup as final course during special occasions.

Ingredients
- 2 large, ripe tomatoes
- 4 tbsp sugar ( you can add up to 1/2 cup if you like it very sweet)
- 1/2 tsp Ghee
- 1 tsp almond flakes ( or cashews)
- A pinch of salt
- A pinch of red food color( if your using liquid 1-2 drops )
- A pinch of cinnamon powder (optional)
How it's made:
- Puree tomatoes and keep it aside
- Heat a sauce pan, add ghee, almonds, tomato puree, salt, color, cinnamon powder, sugar and mix. Bring it to boiling stage in high flame
- Reduce flame once boiling, keep stirring occasionally until thickens.
- Don't make it too thick because it will further thicken once cooled off. It should be like jam when cooled.
- Serve in room temperature or chilled.
