Paneer can be cooked with lots of different flavors like chicken. It's is my favorite and I like to try new combination of flavors with it.
Coconut Paneer masala was just on impulse recipe I cooked and it turned out luscious.
It's not something innovative but still.... :D

Let see what's required to make Coconut Paneer Masala:
Ingredients
- 200g Paneer
- 1 medium sized onion
- 2 medium sized tomatoes
- 2 dry red chillies (more to taste)
- 8-10 Almonds ( skin removed)
- 1/2 cup Thick coconut milk
- Few coriander leaves
- 1/2 tbsp Ginger and garlic Paste
- 1/2 tbsp red chili powder ( more to taste)
- 1 tsp cumin powder
- 1 tsp garam masala powder
- 1/4 tsp Turmeric powder
- Salt to taste
- 1 small cinnamon stick
- 2 cardamon
- 2 cloves
- 1 tbsp coconut oil
- 1 tbsp butter
How it's made:
- Dice Onion, tomatoes, and paneer to medium sized cubes.
- Heat coconut oil on a pan and add dry chilli, onion, Tomatoes, almonds, salt and sauté for a minute.
- Add ginger garlic paste and sauté for few seconds and add chili, cumin and turmeric powder. Sauté until onion and tomatoes are cooked well.
- Once they are cooked let me cool , transfer to mixing jar and grind to fine paste. Keep it aside for later use.
- Reheat the same pan, add butter, cinnamon stick, cardamon and cloves.
- Once they begin to splutter add paneer and cook all sides till it slightly changes color (to light brown).
- Once panner turns light brown in color add in the paste and bring it to boil.
- When the Curry is boiling add coconut milk and stir.
- At this stage you can taste and adjust seasonings.
- Add garam masala, chopped coriander leaves and mix.
- Switch off flame, transfer to serving bowl.
- Serve hot with rice or chappati.
