Semolina Cake
Semolina cake, known as 'dumroot' or ' sooji adai' or 'rava adai', is a famous sweet dish among Muslim community in Tamil Nadu. It's made during Eid and other special occasions.
As name implies, it's made with Semolina/soji. It's usually made in large quantity. Here, I'll show you how to make them in small quantity in oven.
Ingredients:
- 1/2 kg Semolina
- 1/2 kg Sugar
- 7 Eggs(6 if large eggs)
- 250g Ghee
- 3-4 Tbs Condensed Milk
- 1 Tbs Cardamom, crushed
- 10-12 cashew nuts
- some Almonds, Chopped (optional)
- Pinch of salt
- Butter for greasing
How to make:
Crack eggs into a bowl and start mixing with a hand mixer. Add salt, cardamom, sugar and keep mixing until egg mixture is white and fluffy. Add in semolina and condensed milk and mix.
Heat a pan and add ghee. once ghee is heated add few of the nuts and keep some for garnishing. Add the batter into the cooking pan and start mixing with a spatula. mix and scrap edges and bottom continuously. Once the batter turns thick remove from flame.
Grease a pan and add the hot batter. Spread evenly and garnish.
Bake it in oven at 200 degrees for 20-30 minutes. Allow the cake to cool completely for 2-3 hours or overnight and serve.(you might need to reheat bottom of the pan for cake to loosen up)
