Lachha paratha is a famous Indian flat bread. The word 'lachha' means 'layers'. Hence, the name lachha paratha or layer flat bread.
There are several methods to make lachha paratha, But I always prefer this method. It's easier and has lots of layers which makes the paratha crispy and yummy to eat!

This recipe makes 6 medium sized whole wheat Paratha.
Ingredients:
- 1 & 1/2 cups Whole wheat flour (+1/2 cup for dusting)
- 1/2 cup All - purpose flour
- 1 tbsp plain yogurt
- 2 tsp oil/ghee
- 1 tsp sugar
- 1 tsp salt
- Water (around 1/2 to 3/4 cup or as required to make firm dough)
Instructions:
- In a mixing bowl, add all the dry ingredients and give it a mix.
- Then add yogurt, oil, 2 tbsp water and start kneading.
- Add water gradually (1-2 tbsp at a time) and knead until the dough is firm and not sticking to the bowl.
- Grease dough with few drops of oil/ghee, cover and let it rest for 15-30 minutes.
- On a flat surface dust little flour, take one large ball sized portion of dough and flatten it to thin disc on dusted surface with a rolling pin.
- Brush the flattened dough with oil/ghee and cut it to thin strips as shown in video below.
- Take all the strips together like a thin log.
- Roll it over again to form a spiral like shown in video below.
- Repeat for remaining dough, place them on a greased plate, brush them with little oil/ghee cover and refrigerate for 15 minutes.
- On a flat surface take on rolled dough and flatten it to slightly thick disc.(not too thin or too thick)
- Heat a flat pan, grease with little oil/ghee and carefully place the flattened Paratha without disturbing the shape or layers.
- Add little oil/ghee to the sides and cook on both sides to light brown.
- Once cooked remove from stove and beat the Paratha immediately as shown in video to fluff out layers.
- Repeat same for remaining dough.
- Serve hot with curry of your choice.
