How To Make Simple Mee Hoon

This is a version of Mee Hoon I adapted from Idiappam soru, a recipe made with leftover idiappams.

Ingredients:


  • 200g Mee Hoon Noodle
  • 10 shallots, thinly sliced
  • 5 green chili, thinly sliced(can add more or less according to your preference)
  • 1 tbsp Ghee(or butter)
  • 2 tbsp sesame oil
  • 4 tbsp +1 tsp milk 
  • 2 tsp sugar
  • 2 tsp salt
  • 5-8 cashew nuts, slit to two
  • 2 large eggs
  • Water to soak noodles

 Instruction:


  • In a large bowl soak noodles for 30 minutes.
  • After 30 minutes, drain water, add 4 tbsp milk and sugar to noodles and mix. Keep it aside for 10 minutes.
  • Meanwhile,  hear a wok or pan and add 1 tbsp sesame oil.
  • beat egg with pinch of salt and 1 tsp milk. Pour in heated oil and keep pushing inside with a spatula. Transfer the prepared egg popcorn to a plate in the same pan add remaining oil and ghee, add cashews, chili, shallots and sauté for a minute. 
  • Add salt and mix. Add the soaking noodles along with milk(do not drain the milk). Mix well and cook covered in low flame for few minutes until milk is absorbed and noodles are soft. You can add more milk, 1 tbsp at a time if Noodle is hard.
  • Once noodles are cooked add egg popcorn, mix and serve hot.
