Ladies finger Poriyal | Ladies Finger & Potato Fry

Hello!
Today's recipe will make your kids eat ladies finger...It's crunchy, juicy with lots of flavours bursting in your mouth!

Let's get to the recipe...

Ingredients:

  • 200g Ladies fingers(12-15)
  • 1 small Potato 
  • 1 tbsp onion
  • 1 tbsp peanut
  • 1 tsp mustard seed
  • Few Curry leaves
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1/4 tsp asafoetida powder (perungayam)
  • Salt to taste
  • 2 tbsp oil

How to make:

  • Chop potato, ladies finger to thin slices.
  • Chop onion and peanut finely.
  • Heat oil in a pan, add mustard seeds and let it splutter.
  • Add peanut, curry leaves and onion.
  • Sauté for a minute and add potato.
  • Add all the spices and fry for 2 minutes.
  • Add ladies finger and cook untill stickiness is completely gone.
  • Stir occasionally.
  • Add grated coconut, mix and transfer to serving bowl
  • Serve hot with sambar rice, curd rice or chappati.
