Kothu Porotta

Kothu Porotta is a famous street food in South India. It can be made from scratch or with leftover porottas. In this post I'll be sharing with you the recipe for quick and easy kothu Porotta with leftovers.


There are lots of ways to make kothu Porotta and so much or so little you can add into it(you can simply add onions, tomatoes and nothing else or you can add shredded chicken/mutton/veggies and make it more flavourful). Here, I have made a very simple version. Let's get to the recipe:

Ingredients

  • 4-5 Porotta
  • 3 eggs
  • 1 green chili
  • 2 large onions
  • 2 large tomatoes
  • 1 small piece carrot ( around 1-2tbsp after chopped)
  • 1/4 capsicum (around 1-2tbsp after chopped)
  • 1/2 tbsp Ginger and garlic paste
  • 1 tbsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 tbsp lemon juice
  • 4 tbsp oil
  • Salt to taste

How to make

  • Coarsely grind Porotta and keep it aside.
  • Chop green chili into thin slices (because I have a child I cut it into 2 so that it would be easy to find)
  • Slice onion, tomatoes, carrot and capsicum to small dices.
  • Add oil to a hot pan and add green chili, onion, tomatoes and sauté until tomatoes turn mushy and onions are translucent. Add salt during sauté to speed up the process.
  • Once onion and tomatoes are cooked add ginger and garlic paste and sauté for a minute. Add Chili, turmeric powder mix well and add the veggies ( now is time when you can add cooked and shredded chicken/mutton you can also use meat from leftover curry)
  • Sauté veggies for a minute and add in the eggs and scramble them.
  • Once the eggs are cooked add ground Porotta gradually and mix. Reduce heat at this stage to avoid burn your Porotta.
  • Once porrota is mixed well and starts to crisp add lemon juice, mix and koth Porotta is ready!
  • Serve hot
  • can be eaten as snack or main course.
  • Garnish with Curry leaves or coriander leaves
